When we were in Florida meeting Selja and Marko, we ate the most delicious southern bread pudding at a restaurant called Crackers. It was seriously THE BEST bread pudding I have ever had. Since we have been home for a few weeks, I’ve talked non-stop about finding a similar recipe and trying to make it. Lucky for me (and you), I found a similar recipe and found it to be just as delicious and quite easy to make! We’ll definitely be re-visiting this recipe again when friends visit! ♥
- 9 pieces of day old raisin bread (if bread is normal sized, use 6)
- 2 and a half tablespoons butter, melted
- 4 eggs, beaten
- 2 cups of milk
- 3/4 cup of sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- Preheat oven to 350 degrees F.
- Break bread into small pieces into an 8 inch square baking pan. Drizzle melted butter or margarine over bread.
- In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
- Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.
This recipe tastes even better as left overs and was delicious with a little bit of vanilla ice cream. One morning I ate it for breakfast after I put in in the microwave and I put a little bit of milk in the bottom…delicious!
Also, it is totally possible to eat foods like this every once in a while with calorie tracking! This is why I love this system so much!
